About the Role
We’re looking for a skilled and passionate Head Baker with a strong background in artisan bread baking to lead our bakery operations. The ideal candidate is a hands-on leader with a deep understanding of fermentation, dough handling, and traditional bread-making techniques. Key Responsibilities
- Lead daily bread production, including mixing, shaping, proofing, and baking a variety of breads (sourdough, baguettes, focaccia, etc.)
- Manage and mentor a team of bakers, ensuring efficiency, quality, and consistency
- Maintain and refine bread recipes, fermentation schedules, and production plans
- Oversee ingredient sourcing, inventory, and equipment maintenance
- Uphold all food safety, cleanliness, and sanitation standards in the bakery
- Collaborate with culinary leadership on menu development and seasonal offerings
- Ensure timely execution and delivery of baked goods for service and retail
- Continuously improve baking processes and train team members in best practices
Qualifications
- 3+ years of professional bread baking experience, including at least 1 year in a leadership role
- In-depth knowledge of sourdough, natural fermentation, preferments, and other artisan techniques
- Strong organizational and time management skills
- Ability to lead and inspire a team in a fast-paced environment
- Passion for high-quality, scratch baking and continuous learning
- Physical ability to lift heavy bags of flour and work long hours standing in a hot kitchen
- Availability for early morning shifts (starting as early as 3–5 AM)
