About the Restaurant:
An elevated dining concept that has been open for a year, featuring a unique fusion of Japanese and Ethiopian cuisines. The restaurant includes a 90-seater dining area, a 25-seater bar, and a 35-capacity private members' lounge. It averages 140-150 covers in the evenings and 60 for lunch, with an average spend of $60 per head. It is highly regarded by both international visitors and high-profile clients, including ambassadors and dignitaries.
Job Description:
The Restaurant Manager will report directly to the Chef Partner/General Manager of the owning company and will be supported by three Restaurant Supervisors. The FOH team structure includes head waiters, table attendants (waiters), and runners, with a strong emphasis on attentive service and guest experience.
Key Responsibilities:
- Ensure consistent delivery of service standards and a focus on the guest experience.
- Develop and adjust Standard Operating Procedures (SOPs) to drive excellence.
- Oversee staff training and development to maintain high levels of performance.
- Manage day-to-day operations, including overseeing service in the restaurant, bar, and lounge areas.
- Work closely with the Chef Partner/GM to ensure smooth operations and exceptional guest experiences.
- Manage budgets
Team and Structure:
- 95 team members (FOH and BOH).
- 3 Restaurant Supervisors.
- FOH structure includes head waiters, table attendants, and runners.
Operations:
- Open 7 days a week, lunch and dinner.
- Operating hours: 11:30 AM until close.
- Initial shift schedule will be split, transitioning to evenings once settled.
- 6-day work week.
Requirements:
- Minimum of 5 years of upscale restaurant management experience.
- Sub-Saharan Africa experience required; preference given to candidates with experience in South Africa.
- Hospitality Diploma, Degree, or relevant certifications are advantageous for visa processing.
- Strong leadership and organizational skills, with a focus on staff training and development.
- Ability to drive consistency in service delivery and maintain high standards.
