Production Director - (Culinary)

Reports To: Vice President, Inflight Catering, Central & Eastern Regions, Saudi Arabia


Key Roles and Responsibilities:


Strategic Planning

  • Work collaboratively on developing strategic plans, policies, and decisions to ensure production aligns with the organization's vision and business objectives.
  • Set production budgets and consistently oversee costs, productivity, and efficiency.
  • Operations Management
  • Manage production units and lead teams towards operational excellence.
  • Establish schedules, processes, yields, quality standards, and cold chain protocols to fulfill customer needs and demands.
  • Coordinate with the purchasing and stores departments for ingredient supply and inventory management.
  • Prepare for peak periods such as Ramadan and Hajj with operational plans.


Quality and Compliance

  • Ensure production meets the catering standards and food safety protocols required by airline clients.
  • Address customer complaints and take corrective measures.
  • Maintain, update, and ensure adherence to standard operating procedures.
  • Keep abreast of industry developments and adopt best practices.


People Management

  • Assess staff performance; manage promotions, contract renewals, and terminations.
  • Determine training requirements and arrange for development programs.
  • Promote positive employee relations and ensure effective two-way communication.


Reporting and Administration

  • Deliver regular status reports as per company directives.
  • Engage in meetings with executives, managers, and other staff members.
  • Propose investments in technology and equipment based on research.

Requirements:

  • Minimum 20 years of experience, including at least 10 years in large inflight catering units (e.g., dnata, LSG, Gate, Newrest, Do&Co, EKFC, QACC, SATS).
  • Bachelor's degree in hospitality/culinary/catering.
  • Fluent in English, both reading and writing.
