The Role

We are searching for a rising star in the beverage industry to step in as our group-wide Beverage Director. You approach the bar with a chef’s mindset—driven by flavor architecture, technique, seasonality, and culinary synergy. While you will have full ownership of our wine programs, your true creative passion lies in progressive craft cocktails and bar culture rather than the traditional sommelier track. You are an agile leader who thrives equally in hands-on R&D, on the floor during service, and on the operational side managing multi-unit financials.

What You’ll Do

• Lead Group-Wide Beverage & R&D: Direct the creative vision, hands-on R&D, and day-to-day execution of the beverage programs across all existing restaurant concepts, private event venues, and future openings.
• Drive Culinary-Focused Cocktail Programs: Partner closely with our award-winning chef and executive culinary leadership to develop innovative, technique-driven craft cocktail and zero-proof menus that complement each kitchen's point of view.
• Own the Wine Portfolio: Manage the group’s wine strategy end-to-end—overseeing list curation, purchasing, pricing, and staff training across every concept.
• Manage Multi-Unit P&L & Operations: Hold full financial accountability across the portfolio, including beverage COGS, recipe costing, inventory controls, and vendor/distributor negotiations.
• Build & Mentor Bar Talent: Maintain a strong floor presence while recruiting, training, and developing hospitality professionals across the organization.
