The Job: Head Bakery and Pastry Chef

Reports To: Executive Chef, Production Segment: In-Flight Catering Division: Production Department: Production


About the Role:

Join our team and be at the forefront of the in-flight catering industry, dedicated to providing unparalleled culinary experiences to our airline clientele.

You will lead our dynamic team of professionals within our Production Division, specifically in the Bakery & Pastry Department, to achieve our company's ambitious goals and objectives.

 

Key Responsibilities:

● Strategic Leadership:

○ Direct and oversee the bakery and pastry production team, ensuring activities align with company goals, including maintaining top food standards, efficient and consistently high-quality output, and adherence to strict hygiene and personnel standards.

● Innovation and Development:

○ Head the creation of new bakery and pastry products, including participating in international food fairs and presentations.

○ Regularly update and maintain a comprehensive recipe book to standardize and enhance the quality of our offerings.

● Quality and Standards Compliance:

○ Ensure production adheres to Catering Orders, quality control (QQC), and the highest airline standards.

○ Oversee the establishment of time schedules, expiry date compliance, and maintain rigorous Saudia Catering and ISO standards across all operations.

● Operational Excellence:

○ Conduct thorough cost and time analyses for all items produced, suggest and implement improvements in production procedures, and oversee proper equipment maintenance and repair.

○ Coordinate closely with the production planner for effective production scheduling, including during night shifts or planner absences.

● Collaboration and Communication:

○ Foster a positive working relationship with related departments (e.g., Kitchen, Purchasing, Tray Setting, Sales) to ensure seamless operation.

○ Conduct monthly staff meetings for training, ISO updates, and maintain a culture of continuous improvement.

● Safety and Cybersecurity Compliance:

○ Uphold high standards of kitchen and personal hygiene, ensuring all activities comply with health and safety regulations (HACCP).

○ Adhere to company cybersecurity policies, safeguarding data integrity and operational security.

Requirements:

● 10+ years experience with at least 5 years in large inflight catering units (dnata, LSG, Gate, Newrest, Do&Co, EKFC, QACC, SATS), catering company, cruise or other high volume, upscale catering operation

● C&G level 1 & 2 or equivalent

● English reading and writing
